Stuffed Eggplant

Great way to cook Eggplant, tender the eggplants are better the taste. 

Ingredients:

Eggplant - 6 nos
Red Onion - 1 large
Idli / Dosa Powder - 2 Table Spoon

Method:

- Mix finely chopped onions with Idli / Dosa powder.
- Slit the eggplant and stuff it with the above mixture.
- In a pan add oil and garnish with mustard & urad dhal
- Put the eggplant in the pan and close the lid to cook.
- Turn it periodically to cook evenly.
