My personal favorite...
Ingredients:
- Small Onions 15
- Tamarind (lemon size)
- Drum sticks or Potato (Optional)
- Chili Powder - 1/2 spoon
- Sambar or Vathakuzlambu powder - 2 spoons
- Jaggery - Small piece
- Hing & Turmeric powder
- Methi powder
For Garnish:
- Mustard Seeds
- Methi Seeds
- Lots of Curry leaves
- 2 red chilies
- For a flavorful kuzlambu use Sesame oil for garnish. Add all the ingredients mentioned for Garnish.
- Soak tamarind in warm water with salt for 10 mins and then extract thick juice out of it and keep aside.
- Fry onions along with garnish, add turmeric powder, hing and salt and saute well.
- Add either drumsticks or potato and saute for few mins.
- Now add the Sambar or the Kuzlambu powder and saute it. Don't let it burn
- Finally add the tamarind extract, chili powder and salt and let it boil and come to a nice consistency. You could see the oil separate out.
- Add little methi powder and the jaggery and then turn the heat off.
